I tend to forget that fruits and vegetables count as carbs. Starches always come to mind first.

I’d like to learn more about insulin responses and the glycemic index.

It also feels pretty misleading that Wonder bread, for example, has a similar carb count as 100% whole grain bread. (Don’t worry, I don’t eat Wonder bread). Even though I can track macros on my FitBit app, it doesn’t differentiate between the type of carb.

overnight oats are my jam! I am very plain with my choices but usually it’s either vanilla or chocolate protein powder. Easy prep the night before and allows me to grab and go in the morning preventing me from picking a not so nutrias of filling snack to start the day!
My partner has the best recipe which is very similar to the one above and another pumkinspice one! However I cant remember them exactly so I will post that tomorrow along wth my attempt of the roasted chickpeas, those like a great snack for studying!

My goal is to reduce the amount of processed foods in our diet! I don’t think I get enough healthy fat each day.

Sorry I’m late to the challenge but appreciate the information just the same! With age we lose muscle mass so eating more lean protein is must! Thank you for the suggestions. I’m going to try tuna mixed with humas on cucumbers this weekend!

No I do not. Especially lately over the holidays. I have been reaching for the “easy” choices, fast food, processed snacks, and not to mention all the holiday treats. Spending more time out of the house (and kitchen) than normal!

I think this starts with planning and not purchasing such foods.

I feel personally the easiest way to begin would be to start with my breakfast choices. handful of almonds or walnuts, greek yogurt, or maybe adding some flax seeds to my overnight oats could be a good start to making sure I am getting enough of those healthy fats!

I don’t need to restrict just be more on top of monitoring and choice making

No, I don’t get adequate healthy fats in a day. Overall, I get more than enough fat, just not the healthy kind. I need to be more mindful of getting my fats from whole foods, as I know I eat too many processed foods out of convenience. I am back to work on Monday after having two weeks off, so my hope is that I can be better at batch cooking, so that I can eat leftovers, instead of relying on something quick like a can of soup or a grilled cheese sandwich.

“Since our brains are fat-based, changes in fat composition can affect the transmission of nervous system impulses, mood, memory, and more.” – This is interesting to me! Jodi and I went for DEXA scans earlier this week. I guess we should be tracking our moods, as we attempt to decrease fat mass.
